Am I correct that the keyword "professional training courses" also includes the keywords "professional training" and "training courses". That I don't necessarily need to optimize for them all since the one contains the other two.

It depends on who you ask. I've seen it taught both ways. One of the best classes I've ever seen on SEO was given by a gal named Cricket. http://www.gnc-web-creations.com/seo-optimization.htm This is a link to her class information. The class is free.

Hello!
I will definitely check out this site for SEO information. I am struggling with finding the right keywords. I thought that I understood this, but I am really second guessing myself. Does anyone have a suggestion on a good place to research keywords? Does anyone have any other places that they would recommend for some good information on Keyword Selection and the "best" method to go about it? Thanks!

The biggest factor that will sway how you rank for these terms are what other websites use when they link to your site. With enough backlinks to your site, you should rank for both, yes.
A different option is to make landing pages for all of the three terms - and optimize one at a time.
