Chunky Broccoli Cheese Soup

1 cup thinly sliced carrots
1 cup plus 2 tablespoons water, divided
1 – 13 ounce package frozen broccoli florets, thawed
2 ½ cups milk
¼ cup flour
2 teaspoons chicken bouillon granules
½ teaspoon salt
¼ teaspoon pepper
1 cup shredded cheddar cheese

In a 2 qt. microwave safe dish, combine the carrots and two tablespoons water. Cover and microwave for 2 minutes. Stir and microwave 2 minutes more. Add broccoli, cover and microwave for 3 minutes, stirring half way through. Add the milk to this mixture and set aside.

In a small bowl, mix the flour, bouillon, salt and pepper. Stir in remaining water. Pour into vegetable mixture and microwave for 7 minutes. Soup should be boiling and thickened. Stir once per minute. For the last minute, stir in the cheese.
