Chicken Breasts With Garden Salsa

Ingredients

For 4 servings you will need:

4 chicken breasts, boneless, 1 1/2 lbs.
2 Tbsp. olive oil
2 Tbsp. butter or margarine
1/4 tsp. salt
1/8 tsp. pepper

Garden Salsa:

4 medium zucchini
4 Tbsp. olive oil
4 plum tomatoes, chopped
4 Tbsp. lemon juice
1/3 tsp. each dried tarragon, mint and oregano leaves
1/4 tsp. minced garlic
1/2 tsp. salt
1/8 tsp. pepper
Dash red pepper sauce

Directions

Rinse chicken breasts. Pat dry.

In a large, heavy skillet, heat the oil and butter. Brown the chicken, about 5 minutes on each side.

Season the chicken with salt and pepper. Cover.

Cover over low heat 20 minutes. Turn several times. Baste with pan juices while cooking.

Dice the zucchini. Heat 2 Tbsp. oil in a large , heavy skillet. Saute' the zucchini briefly until tender-crisp. Stir in tomatoes. Heat.

Combine the remaining oil, lemon juice, herbs, garlic, salt, pepper and red pepper sauce. Stir into the vegatables. Remove from heat.

Serve chicken, spooned with the garden salsa.
